It’s a good mix of recipes this week, including a breakfast-for-lunch option. We have prosciutto-wrapped mini Frittata muffins, Paleo stuffed pork loin with ginger garlic brussel sprouts, creamy crockpot lemon chicken kale soup, and lazy upside down cottage pie.
We’ll cheat a bit on our lunch of the day by turning it into breakfast. The Prosciutto-Wrapped Mini Frittata Muffin recipe, from Nomnompaleo, smells great as its baking away in the oven. Who needs a flour-based crust when you’ve got prosciutto? You can be flexible with this recipe and add your favorite veggies.
For dinner, we have a wonderful tasting Paleo Stuffed Pork Loin Roast, accompanied by Ginger Garlic Brussel Sprouts, both from the kitchen of Stupideasypaleo. This is a decadent meal. The walnut-based stuffing adds a nice flavor to the roast. And the brussel sprouts carries the pork theme nicely, as it includes strips of bacon. You can always substitute your vegetable as you like.

Finally, our final dinner is Lazy Upside Down Cottage Pie, from Meatified. While I’m not fond of laziness, I don’t mind it in my recipes! I like to substitute vegetable broth for the coconut milk. Eat your parsnips! And you might try some green veggies to add to your meal. Green beans would be my choice.
