Healthy 7 Menu for Week 17

Another Healthy 7 is Here!

Welcome to another week of Healthy 7 menus. If you’ve undertaken your very first Whole30, I hope you are feeling grand.  Every week I look for the best of the best and give you a variety of options, from some of the country’s top-notch cooks.  So let’s get right to the menu for week 17. We feature one of my all-time favorites – Easy Sunday beef stew, Cantonese chicken thighs with curried cauliflower rice, cajun shrimp spaghetti, and cider braised country ribs with herbed whipped sweet potatoes. Menu Highlights

The week starts with Easy Sunday Beef Stew, from StupidEasyPaleo. It’s an easy and fast recipe (if you make it in the Instant Pot). And you can improvise with your vegetables – you can switch out the parsnips for potatoes if you like. Use your favorite herbs, and make a big batch because this stew freezes very well. Add a salad of your choice to round out your lunch.

Cantonese Chicken Thighs (from NomNomPaleo) with Curried Cauliflower Rice (from StupidEasyPaleo) is our dinner delight! If you prefer breasts or drumsticks, that works too. This chicken features a great blend of flavors. And the curried cauliflower rice makes a great companion. Of course, you can substitute riced broccoli if you prefer it over cauliflower.

Next up is Paleo Cajun Shrimp Spaghetti, from Meatified. Use your Inspiralizer for the zucchini “spaghetti,” and add some extra spices if you like. And you can use just about any type of meat in this dish. Pork, chicken, and even beef work great. You can’t go wrong with cajun spaghetti!

Our last meal of the week is Cider Braised Country Ribs with Herbed Sweet Potatoes & Apple Onion Gravy, from Meatified. This is comfort food at its best. And you can use the broth instead of coconut milk in the sweet potatoes  whatever works for you. Enjoy this wonderful meal from your dining room table.
