Healthy 7 Menu for Week 16

Here’s to Another Week of Healthy 7!

We have yet another wonderful group of recipes for you that are compliant with Whole30 diets. If you’re new to Whole 30, you might want to check out my experience, which was a real ye-opener. Let’s get to the menu for week 16 We feature stuffed acorn squash, buffalo chicken fingers with crispy potatoes, tuna salad, and one skillet Paleo dinner.  Enjoy!

Menu Highlights

We begin the week with Stuffed Acorn Squash with Sausage, Apples and Cranberries, from PaleoRunningMomma. While this dish looks and sounds like a holiday meal, it’s a great comfort meal for a cold January day. The good news is that acorn squash is a whole lot easier to prepare than its cousin, butternut squash. You can improvise on the sausage – the spicier the better for me!

For dinner, how about some Crispy Buffalo Chicken Fingers (from StupidEasyPaleo), paired with Crispy Potatoes (from NomNonPaleo) and a side of green beans or your favorite vegetables? What’s the secret coating for the Buffalo chicken fingers? Crushed pork rinds. Yes, most pork rinds are Whole30 compliant! And the Instant Pot makes quick work of the Crispy Potatoes.

Next up is Paleo Tuna Salad with Avocado, Bacon, and Chipotle Aioli, by PaleoRunningMomma. You won’t be bored with this recipe! And the Chipotle Aioli is a winning recipe that you can use in other recipes and salads. A great blend of seasonings!

Finally, we have the uber-easy One Skillet Paleo Dinner, from StupidEasyPaleo. It doesn’t get any easier – toss ground beef, riced cauliflower, and tomato sauce together and you have dinner. Add your own garnishes and sneak in some additional veggies if you like – onions, garlic, asparagus – make it your own!
