Every once in awhile, I get a craving for spaghetti and meatballs. But since I stay clear of pasta, what’s a girl to do? Along came the spiralizer and before I knew it, I was spiralizing my way to a healthier version of “spaghetti.” So this week, we feature spaghetti and meatballs, easy chicken stir fry, sloppy joe stuffed sweet potatoes, and pan-fried Haddock with lemon and capers.
We’re going to start the week with Easy Chicken Stir Fry, from Stupideasypaleo. I suspect you’ll have plenty of temptations this week in terms of food, so this is a good way to load up on vegetables. And you can swap out the veggies and meat as you please. One of the best things about stir fry is that it is Super EASY to prepare!
Sloppy Joe Stuffed Sweet Potatoes, from PaleoRunningMomma is next on our list. This dish deserves its own meal, because it’s incredibly filling. The stuffed sweet potatoes make great leftovers and can easily carry you through the week.
And it’s time to make a big batch of Spaghetti and Meatballs, a favorite standby. I make a large pot of Marinara Sauce with Hidden Vegetables (TheFlavorBender) and put the sauce into freezer bags so that I can pull them out of the freezer for a quick meal. The Meatballs come from stayfitmom and also freeze well. So all you need fresh is spiralized “noodles” to complete the dish – I recommend spiralized zucchini.
Finally, Pan-Fried Haddock with Lemon and Capers, from StupidEasyPaleo, rounds out the regular menu. This is a very fast and easy recipe, zipping with flavors. Add your choice of vegetable – perhaps a fresh green salad, roasted asparagus, or baked sweet potatoes.
