Here we are, already hitting 11 weeks of Healthy 7 menus. Here’s the full menu: clam chowder, braised pork wings with apple and onion gravy, roasted Mediterranean vegetables, the perfect burger with shoestring parsnip fries, and finally, chicken pesto with spaghetti squash. Enjoy!
Since I’m thinking of the beach, it seems like a great time to introduce Paleo Clam Chowder, from Stupideasypaleo. It’s a New England-style recipe, though I have a confession to make! I did not grow up in the northeast, so I’ve no idea what makes a clam chowder New England-style. Perhaps one of my healthy readers would like to share? The recipe looks pretty adaptable so you can easily modify it to suit your tastes.
Our first dinner of the week is Braised Pork Wings with Apple and Onion Gravy, from Meatified.Okay, I know you’re going to ask. Because I did. What is a pork wing? Turns out “wings” are part of the pork shank – the lower part of the leg. This is a classic pork dish that uses sage and apples. And if you’re creative, I suspect there’s a way to make this in an Instant Pot that will add some deliciousness to it. Give it a try!
Roasted Mediterranean Vegetables, from Stupideasypaleo, make a good side dish for the pork wings. And you can add, subtract, and substitute vegetables as you like. You’ll hear me say it one more time, make this dish your own!
Okay, are you ready for a mouth-watering Perfect Burger, brought to you by Stupideasypaleo? If you can get to your grill, you can bring a little taste of summer into your December day. Broiling works fine as well. Joining the burger on your plate will be Shoestring Parsnip Fries. A spiralizer will make quick work of the parsnip. And if you can’t find parsnips in the store, there’s no harm in using the traditional potato.

And if you’ve been disappointed in your own spaghetti squash, this recipe includes detailed instructions on how you should prepare the squash so that it’s the best ever.
