Welcome to Christmas week! I don’t know about you, but for me this week is the most challenging week of the year to maintain some semblance of healthy eating. I’ll be taking some days off and I’m sure I’ll see some movies and maybe eat some pizza. And I’ll hang out with some of my friends. So yes, I’ll indulge…to a point. I want you to have a wonderful Christmas week. Just don’t overdo it!
I’ve got a special meal planned for Christmas Day. Now if you don’t celebrate the holiday, of course you can switch around your meals and enjoy the prime rib dinner any day you please. There are no rules here! Just good food. And speaking of prime rib, I was seriously debating between ham and beef, but after watching How the Grinch Stole Christmas (think roast beast dinner), the prime rib got my vote. Here’s the Christmas menu.
Garlic prime rib, potatoes with rosemary, roasted brussel sprouts, and Paleo coconut treat. Yummy!
And here’s your special Christmas menu. In the spotlight, we have Garlic Prime Rib (allrecipes). Use a roaster oven if you have one. This is a fabulous recipe and makes great leftovers.
The Prime Rib is paired with Potatoes with Rosemary, from BravoforPaleo. Use thinly sliced potatoes to make a beautiful presentation.
For a vegetable, Roasted Brussel Sprouts (allrecipes) looks like a winner. Brussel sprouts are very easy to roast and any leftovers can be reheated.
And here’s your weekly reminder to make the Health 7 menu work for you! Swap out vegetables. Adapt the recipes to meet your needs. Don’t make something you know you’ll hate! You can always pull out favorites from previous menus and switch around your meals as you like.
